  • Duck breasts: 4
  • Sea salt: 4 teaspoons
  • Pepper: 4 teaspoons
  • Garlic: 8 cloves
  • Fresh rosemary: 4 sprigs
  • Potato: 1 ½ cups (400 g)
  • Butter: 2 teaspoons (10 g)
  • Milk: 1 oz (20 mL)
  • Orange zest, half an orange
  • Olive oil: 1 tablespoon
  • Salt: 1 teaspoon
  • Pepper: 1 teaspoon
  • Flour: ½ teaspoon
  • Red wine: ½ cup (100 ml)
  • Cranberry sauce: 3 teaspoons
  • Honey: 2 teaspoons
  • Orange: 1 (juice)
  • Chicken stock: ¼ cup (60 ml)
  • Salt: ½ teaspoon
  • Pepper: ½ teaspoon
  • Orange zest: to serve (of half an orange)

Preparing Method:

Before preparing this dish, you need to preheat your electric oven to 180˚C. Then, you need to clean the duct meat and score it carefully with a knife. You need to be careful not to cut the flesh of the duck meat too much while scoring it. Now, it’s time for seasoning the meat nicely with 1 teaspoon of salt and pepper. Taking a pan, fry the duck breast skin side down with the rosemary and garlic. You need to put the flame on medium heat and fry the duck meat for at least 4-5 minutes at first and then flip and fry for 1 minute. After this step, bake the meat in the oven for 8-10 minutes or as per your preference.

While it is baking, prepare the mashed potato by mixing the milk, butter, orange zest, olive oil, salt, and pepper with the boiled potato. In the same pan where you have fried the duck, add flour, red wine, cranberry juice, orange juice, honey, chicken stock, salt, and pepper. Simmer this on low heat for at least 10 minutes or until you get a smooth consistency. For serving, you can pipe the mashed potato using a piping bag in the corners of the plate and place the duck breast at the center of the plate. With a spoon, drizzle the wine jus on the meat and add some orange zest and rosemary.
